Simple Epic Nanaicecream


Today is national ice cream day!, beloved ones, I AM celebrating with simple epic vanilla nanaicecream <3

Simple Epic Nanaicecream 

For 2-3 servings:
4 frozen bananas 
2 tbsp coconut sugar
1 pinch of vanilla
Mix until smooth in food processor or high speed blender.

I put sliced bananas on top.
Eat in pure food bliss!

Chocolate Coconut Kisses

Dear ones <3 I got the idea and made these little treats last night and they turned out so yummy. I hope you will enJoy them <3 This recipe makes around 33 small kisses <3

Chocolate Coconut Kisses

1/2 cup coconut oil
4 tbsp cacao
2 tbsp coconut sugar
2 tbsp honey
1/4 cup coconut milk
1 dash vanilla
1-2 dash pink Himalayan salt 
1/2 cup dried shredded coconut

Melt the coconut oil on low heat and mix in all ingredients. Pour mixture into small treat forms. Put in freezer for a few minutes or in the fridge for 30 mins before serving. Store in fridge or freezer. These last in fridge for about 5 days.
Eat in Joy!!

Chocolate Chia Pudding

Dear ones, I made this pudding yesterday, it was my first time making chia pudding 
and I AM so happy I tried it because it is absolutely delicious <3 

Chocolate Chia Pudding
Serves 2

3 dl/1 1/4 cup rice milk (or use almond milk)
3.5 tbsp chia seeds
2.5-3 tbsp cacao
1 tbsp honey or agave
a dash of vanilla
a dash of pink Himalayan salt

Mix all ingredients together in a bowl, divide into two small serving glasses or bowls.
Refrigerate for at least an hour, or over night.
Serve with fruit, berries, nuts, chocolate shavings/chips, or shredded coconut. I used cherries.

Valentine's Day Strawberry Treats, Raw Vegan

I made these sweet and delicious strawberry treats yesterday, they are perfect for Valentine's Day and all other days too;P I hope you will Love them <3


Valentine's Day Strawberry Treats

5 dl/2 cups strawberries 
6.25 dl/2.5 cups oats
1 tbsp honey
3 tbsp coconut sugar
2-3 tbsp coconut oil
2-3 tbsp coconut water, or plain water (if needed)
a pinch of vanilla
a pinch of pink Himalayan salt
2 tbsp dried shredded coconut

Save a small handful of the strawberries to chop up and stir into the batter at the end. Mix the oats to a meal in a food processor, then add the rest of the ingredients and process until a smooth paste is formed. Stir in the chopped strawberries. Put the mixture in a bowl and let sit in the freezer for about an hour. Take it out and form into balls. I colored dried shredded coconut with beet juice to create the pink sprinkles ;) <3

Raw, Vegan Jam Cookies for Valentine's Day




Today I made these heart shaped raw vegan jam cookies which I will serve on Valentine's Day <3




Raw, Vegan Jam Cookies for Valentines Day


Cookies

2.5 dl/1 cup oats
2.5 dl/1 cup medjool dates/raisins/figs (I mixed all three)
1 tbsp coconut oil
a pinch of vanilla
a pinch of pink Himalayan salt


Jam

2.5 dl/1 cup raspberries
1 tbsp raw honey, or whatever sweetener you prefer

Process the oats in a food processor to a meal. Add the rest of the cookie ingredients and process until a smooth dough is formed. 
Mix raspberries and honey together in a blender. 
Roll out the cookie dough, and use cookie cutters to cut the dough into pretty shapes. 
Transfer the cookies onto a baking tray lined with parchment paper.
Dehydrate until the cookies have preferred consistency. I used my oven at lowest temperature to dehydrate. The cookies are also delicious without dehydration. 
Assemble the cookies and add jam in the middle. Dehydrate some more if you wish the jam to set a bit. I did so and it turned out so yummy.

Fully Raw Cherry Milkshake for Valentine's Day

2 frozen bananas, diced 
2.5 dl/1 cup cherries 
2.5 dl/1 cup rice milk (or whatever vegan milk you prefer)
2 tbsp coconut milk (use the top opaque layer)
a pinch of vanilla

Mix all ingredients in a blender until smooth. Enjoy <3

Vegan Healthier Peanut Butter Cookies/Energy Bites



Hi there! I made these vegan cookies a couple of days ago, and they turned out great, I feel they are more like an energy snack than a cookie, but either way it's yum. These make a great snack! <3



Vegan Healthier Peanut Butter Cookies/Energy Bites

2 ripe bananas, mashed
0,8 dl/1/3 cup peanut butter
1,5 dl/2/3 cup applesauce. My recipe for raw applesauce here
1/2 tsp vanilla
1/2 tsp pink Himalayan salt
1/2 tsp cinnamon
a dash of cloves, ground
a dash of nutmeg, ground
3,7 dl/1 1/2 cup oats
2 tbsp dried shredded coconut
2 tbsp cacao nibs

Preheat the oven to 175 c/350 f. Line a baking sheet with parchment paper.
Mix mashed bananas, applesauce, peanut butter, and spices together. Then add the oats, coconut, and cacao nibs.
Make about 2 tbsp balls out of the cake mixture and put on the lined baking sheet with about an inch between them. Press to flatten them slightly. Bake for 25-30 minutes.

Raw Applesauce

When I juice I save the pulp, and I decided to make applesauce out of the apple pulp leftovers. This is a great substitute for oil/butter when baking, and it is also delicious on bread.


Raw applesauce from pulp: 

pulp from 4 green big apples 
1.5 tbsp apple cider vinegar
2 medjool dates (pitted)
2 tbsp water
1 tsp cinnamon

Mix all ingredients together in a blender or food processor until smooth.

Raw, Vegan Chocolate Pie

I made this raw chocolate pie back in December for my birthday, and it turned out divinely delicious.
It is easy to make, and I AM sure You will Love it;) <3


Raw, Vegan Chocolate Pie

Crust:
1 fist raisins
1 fist dried medjool dates, pitted
1 fist dried figs

Filling:
2 dl/4/5 cup coconut oil
4 dl/1,7 cup cashew nuts
2 dl/4/5 cup agave nectar, honey or whatever sweetener you prefer
2 dl/4/5 cup water
1 pinch vanilla
1 pinch pink Himalayan salt
2 dl/4/5 cup raw cacao

Crust: Mix all ingredients in a food processor till its a nice paste. Press the mixture out in a pie form.

Filling: Melt the coconut oil, but do not make it hot. use a water bath.
Mix all ingredients except for the cacao, add the cacao when all the other ingredients are already mixed to a smooth batter.

Pour the filling on top of the pie crust. Let the pie sit in the fridge for about 3 hours, or over night. Serve as is, or with berries, fruit, nuts, dried shredded coconut, or whatever you prefer. Enjoy <3

These lemon balls are such fresh and delicious treats, they are a bit sour and perfect for all of us who enjoys not only just the sweetest of sweets. I hope you will Love them <3


Raw, Vegan Lemon Treats

2 dl/3/4 cup almond meal
3.5 tbsp coconut flour
1/4 tsp pink Himalayan salt
2 tbsp agave or honey (or whatever sweetener you prefer)
lemon juice from 1 1/2 lemon (about 7 tbsp)
1 small pinch of vanilla
3 tbsp melted/liquid coconut oil
lemon zest (optional)
shredded coconut for coating

Mix all ingredients in a food processor. Shape into balls, and roll in shredded coconut. Refrigerate for a few hours or over night before serving. Can be stored in the fridge for about a week.

Raw, Vegan Cinnamon Truffles


Shape into balls, and roll in cinnamon-coconut sugar mixture.

Hi there <3 I made these raw, vegan cinnamon truffles last night, they turned out really delicious. They are simple and super easy to make:) Perfect for cozy winter nights, or to serve on the dessert table for Christmas. <3


Raw, Vegan Cinnamon Truffles

2 dl/4/5 cup almond meal (or cashew, or walnut meal)
12 medjool dates, pitted
2 tbsp raw cacao
1 tbsp coconut oil 
1 tbsp coconut water (or rice milk, almond milk or water)
1 tsp cinnamon, ground 
1/4 tsp cloves, ground
1/4 tsp nutmeg, ground 
1/2 pinch ginger, ground
Around 2 tbsp ground cinnamon mixed with 1 tbsp coconut sugar for coating.

Mix all ingredients in a food processor. Shape into balls and roll in the coconut sugar-cinnamon mixture. Refrigerate for at least 30 mins before serving. They can be stored in fridge for about a week. 

Enjoy these truffles of pure Christmas bliss <3

Blissful Healthier Gingerbread Cookies. Vegan, Sugar free, Gluten free


The dough, when mixed together.

Roll out the dough between two baking sheets.

Cut out the cookies with cookie cutters in pretty shapes;)


I made these gingerbread cookies last night. They are vegan, sugar free, and gluten free, whoa!! ;) They turned out super yum, it's so wonderful to be able to enjoy a much healthier version of gingerbread cookies this Christmas. I AM sure you will Love them:) 



Healthier, Vegan Gingerbread Cookies

2.5 dl/1 cup almond meal
1 dl/0.4 cup coconut meal
1 tsp baking soda
3.5 tbsp coconut oil
2-3 tbsp honey (or agave, or whatever sweetener you prefer)
1 1/2-2 tsp cinnamon, ground (I used 2 tsp because I like the cookies to be extra christmasy;P)
1 1/4 tsp ginger, ground
1 1/4 tsp cloves, ground
approximately 5 pinches pink Himalayan salt
2.5 tbsp water

Mix almond meal, coconut meal, and baking soda. 
Melt the coconut oil, honey and the spices in a skillet on low heat. Pour the oil mixture into the dry ingredients mixture and add the water. Mix into a smooth dough. 
Split the batch into two. Roll each piece between two baking sheets. Refrigerate for an hour (or longer, it can be stored in there during the night). 
Set the oven on 175 C/347 F. Place the dough on a baking tray, remove the top baking sheet and leave the bottom. Cut out cookies with cookie cutters. Remove the scraps and knead together to make more cookies of later. 
Bake the cookies in the oven for about 5-10 minutes. They are to be set and crisp. Keep an eye on them so they don't get burnt, it goes fast. 
Then do the process again and again with the rest of the dough till it's all baked. Don't forget to eat some dough;P

Store in the fridge for crispier cookies.

AMAZING RAW, VEGAN CHOCOLATE CHEESECAKE




Yesterday we went to my grandparents to have dinner, and we decided to bring something yummy with us for dessert so I made this chocolate cheesecake. It is absolutely amazingly blissfully delicious, one of my favorite desserts so far;) I AM sure you will Love it!

Amazing Raw, Vegan Chocolate Cheesecake


Base:

3.5 dl/1.5 cup almond meal
2 dl/4/5 cup dried apricots
1 dl/0.4 cup dried shredded coconut
a dash of vanilla

Filling:

2 dl/4/5 cup coconut oil
4 dl/1,7 cup cashew nuts
2 dl/4/5 cup agave nectar, honey or whatever sweetener you prefer
2 dl/4/5 cup water
1 pinch of vanilla
1 pinch of pink Himalayan salt
2 dl/4/5 cup raw cacao

Base:

Mix the ingredients in a food processor. Put coconut oil at the bottom and sides in a medium sized baking form and spread out the base mixture in the form. 

Filling:

Melt the coconut oil, but do not make it hot. use a water bath.
Mix all ingredients except for the cacao, add the cacao when all the other ingredients are already mixed to a smooth batter.

Pour the filling on top of the base layer, spread out and make it even.
Let the cake sit in the freezer over night or for a few hours. Let sit in room temperature for 30 minutes before serving. Serve as it is, or decor with whatever you prefer.

HEAVENLY RAW CHERRY CREAM PIE


This is a raw, vegan cherry pie that I made last week. It turned out absolutely heavenly delicious! Wow! ;P It is so very simple and easy to make. <3


Heavenly Raw Cherry Cream Pie


All you have to do is make your favorite base. 

A simple and yummy Base

12 dates 
2 dl (4/5 cup) nut meal (I often use cashews)
2 tbsp carob powder
a pinch of pink Himalayan salt
vanilla
1 tbsp liquid if needed (almond, rice- or coconut milk/ coconut water)

Mix all the ingredients together in a food processor until smooth.


Filling:

1 can coconut milk
cherries
honey (or whatever sweetener you prefer)

Whisk the white opaque stuff that has gathered at the top of the coconut milk can so that it feels like whipped cream, stir in cherries and honey. 

Press out the base mixture in a pie form, add the cream on top.

AMAZING RAW, VEGAN FALL CHOCOLATE CAKE



This is a yummy and easy raw, vegan chocolate cake with fall spices, topped with chocolate "cream". I just adore fall/Christmas spices and this cake has that cozyness to it;)

Amazing Raw, Vegan Fall Chocolate Cake


Base:

9 dates
3 figs (or just use around 12 dates and no figs)
2 tbsp carob powder (or use raw cacao)
4/5 cup/2 dl cashews
1 tsp cinnamon 
1/3 tsp ground cloves
1/3 tsp ground ginger 
1 tbsp coconut oil
1 tbsp of liquid, I used coconut milk. You can also use almond or rice milk, or coconut water.
a dash of pink Himalayan salt 

Topping:

1 can coconut milk (Carefully spoon out the top layer of opaque white stuff that has gathered at the top of the can)
1 pinch cinnamon 
1 tbsp coconut sugar
1 tsp raw cacao 
a dash of vanilla

Base:

Process the cashews in a food processor until a course meal is formed.
Add the rest of the ingredients. 
Mix until it becomes a smooth paste.

Topping:

Spoon out the top layer of opaque white coconut milk that has gathered at the top of the can. Add the thick milk and the other ingredients into a bowl and whisk it until it looks like whipped cream.

Press out the base mixture on a cake platter. Add the cream on top. Drizzle on some cinnamon, and decor with whatever You prefer, I used dried cocoa beans. Enjoy <3

DELIGHTFUL RAW, VEGAN BLUEBERRY PIE


Happy day to You, dear Ones <3 This is a recipe for a super simple and easy to make pie that I made the other day. It was so delicious. The blueberries and lime in it married really well ;) I hope You will find this one yummy too <3

Delightful Raw, Vegan Blueberry Pie


Base:
2 cups/5 dl almond meal (if you don't have a meal, process almonds in a food processor/blender until a course meal is formed)
2 tbsp honey (or sweetener of your choice)
2 tbsp water

Filling:
1 cup/2.5 dl blueberries
2 bananas 
2 tbsp agave nectar or honey (or sweetener of your choice)
4 tbsp lime juice (juice from approximate one lime)

Base: With a fork, blend the ingredients together till a paste is formed. Press out the mixture in a pie form.

Filling: Mix the ingredients together in a blender till smooth.

Pour the filling on top of the base in the pie form. Let sit in the freezer for a couple of hours before serving.

SIMPLE AND EASY RAW, VEGAN CHOCOLATE


Put coconut oil in a glass bowl, then put the bowl in a pan filled with hot water.

Pour the chocolate into molds.

If You wish to make the chocolate extra epic, add fruit or nuts of your choice;) 
I added almond flakes and raisins to some of mine. Turned out so yum <3

I also wanted to make bark so I poured the chocolate on a plate that had good edges for it. 
To this I added walnuts and a bit of sea salt. Absolutely perfect combo!


Simple and Easy Raw, Vegan Chocolate


1/2 cup/1.25 dl coconut oil
6 tbsp raw cacao (or how much You prefer, taste and see)
2-3 tbsp raw honey (or whatever sweetener You prefer)
a dash of vanilla
a pinch of pink Himalayan salt
optional: fruit and/or nuts of your choice

Put the coconut oil in a glass bowl, put the bowl in a pan filled with hot water and wait till the oil has melted.
Add honey. You may need to put the pan on the stove for a bit to heat up the water some more when adding the honey so that it melts. Add the cacao, vanilla and salt while stirring with a whisk.
Pour into chocolate molds, or on a plate to make bark. Add fruit/nuts if You so wish.
Put in the fridge for a while. Enjoy <3
(This chocolate must be stored in the fridge, otherwise it will melt.)

BLISSFUL RAW APPLE STRUDEL

Dear Ones <3 My Beloved Soul sister Polona sent me a recipe with approximate measurements for a raw apple strudel, saying it is the best one she has ever had, and she wished that I would make a recipe, take pictures and share it with you all. Of course I loved this idea, and rarely say no to some baking;) Here is the result! <3


I used these lovely red medium sized apples.

Layer out the bananas on the almond base layer.

Oh goodness, doesn't the apple mixture look so amazingly yummy and perfect for fall? ;)


Blissful Raw Apple Strudel


2 cups/5 dl almond meal (if you don't have a meal, process almonds in a food processor/blender until a course meal is formed)
1 1/2 tbsp honey (use raw honey if You wish this recipe to be fully raw)
2 tbsp water
2-4 bananas (depending on how much you press out the first layer. I used one banana per layer.)
6-10 apples, depending on size. (I used 6 medium sized ones, but still got a lot left over. Perfect for breakfast or as a snack)
1 cup/2.5 dl raisins 
1 tbsp cinnamon
1 tbsp lemon juice
2 tbsp coconut sugar + a bit to sprinkle on top
1/2 cup/1.25 dl ground macadamia nuts
some almond flakes for topping

Mix with a spoon the almond meal, honey and water till a paste is formed. Press out the mixture on a cake platter. 
Slice the bananas and spread out on the almond layer.
Chop up the apples into small dices and put in a bowl. Add raisins, cinnamon, lemon juice and coconut sugar, mix well. 
Put the apple mixture on top of the bananas, press with a spoon to make it firm. Sprinkle half of the ground macadamia nuts on top. Add the second layer of bananas, then the second layer of apple mixture, press again. 
For topping, sprinkle the rest of the macadamia nuts, then almond flakes, and top off with coconut sugar to make if extra crusty and epic! Let the apple strudel sit in the fridge before serving. Enjoy <3

RAW FIG JAM


This is a simple and delicious fig jam that I made last week to put on top of a raw chocolate cake. 
This jam is also perfect to eat with breakfast/snack combined with for example fruit, berries, nuts, seeds and almond or rice milk. But I know that there are so many more ways to eat this deliciousness;) I AM sure it is yummy to eat with a variety of desserts.


Raw Fig Jam

1 cup/2.5 dl dried or fresh figs, finely chopped
4 tbsp lemon juice
4 tbsp water

Chop the figs into small pieces. Mix all ingredients in a blender till smooth.

DELIGHTFUL RAW, VEGAN CHOCOLATE CAKE TOPPED WITH FIG JAM


Hi there, dear Ones <3 We have had a gloomy and rainy day here, perfect for snuggle up in the couch, drink tea and eat something delicious. As I talked to my dear friend earlier today, she said to me that I should eat some cake, Yes I agreed;) and it felt like a perfect day to create a New yummy cake recipe. This is what I came up with, a raw, vegan chocolate cake topped with fig jam. Yum! I hope that this cake will make your taste buds dance;P


Delightful Raw, Vegan Chocolate Cake topped with Fig Jam

Cake
2 cups/5 dl almond or cashew meal (if you don't have meal, process nuts in a food processor/blender until a course meal is formed)
1 cup/2.5 dl dried dates 
3 tbsp cacao or carob powder
A pinch of pink Himalayan salt

Fig jam
1 cup/2.5 dl dried or fresh figs, finely chopped
4 tbsp lemon juice
4 tbsp water
2 tsp lemon zest (optional)


Cake: Mix all ingredients till smooth in a food processor. Add a bit of water or almond milk if needed.

Jam: Chop the figs into small pieces. Mix all ingredients in a blender till smooth. 

Press out the cake dough on a cake platter. You can create any shape you want;) I chose to make a heart. Spread the fig jam on top. Serve as it is, or with berries/fruit of your choice. Enjoy <3
